Baingan Ka Bharta


Baingan ka bharta recipe is simple and easy to make. Baigan Bharta is a vegetarian dish, basically an aubergine mashed and cooked with spices. This fire-roasted eggplant or grilled eggplant is also called baigan chokha. 

  • Preparation 15-20 Minutes
  • Cooking Time 30 Minutes


  • 4 Medium Tomatoes
  • 3 Medium Red Onion
  • For garnish Coriander Leaves
  • 2 Tablespoon Vegetable Oil
  • 1 Inch Ginger
  • 2 Large Brinjal
  • 4 Green Chili
  • 3/4 Teaspoon Salt
  • 1 Teaspoon Coriander Powder
  • 8 Cloves Garlic
  • 1 Teaspoon Red Chili Powder



  1. Peel the top extruded stem of the Brinjal.
  2. Make a long slit on both sides of the Brinjal and stuff 2 Garlic cloves and 1 chili in each slit.
  3. Apply some oil on the Brinjal and roast on an open flame for 8-10 minutes.
  4. Keep turning every 1-2 minutes to make sure it's roasted well on all sides. 
  5. Remove from fire when roasted and take out the garlic and chili from it.
  6. Keep the Brinjal in water and remove the burnt skin off.
  7. Cut off the stem if you wish to, and chop Brinjal finely.
  8. Chop the onion in small pieces and grind the Tomatoes with the ginger.


  1. Heat oil in a kadahi and stir fry the chopped onion till golden brown.
  2. Add coriander powder, Kashmiri Mirch, and salt.
  3. Fry for 1 more minute then add Tomato, Ginger paste.
  4. Fry till the oil starts separating from the masala.
  5. Mash the Roasted Brinjal, Chilies and garlic, then add in the masala 
  6. Cook for another 3-4 minutes.
  7. Take off the fire and garnish with freshly chopped coriander.


Serve with Chapati or any other bread.
