Gajar Ka Halwa

Gajar Halwa is a dessert recipe from the Indian subcontinent mainly associated with Punjab. Gajar ka halwa is a combination of nuts, milk, sugar, khoya, and ghee with grated carrot. Carrot Halwa is a nutritious dessert with less fat traditionally made during winters.

Ingredients

  • 3 Tablespoon Ghee
  • 2 Kg Carrot
  • 5 - 6 Cardamom
  • 1½ Cup Sugar
  • 15-20 Almonds
  • 2 Kg Milk

Preparation

  1. Thoroughly wash and peel the tender juicy carrots so that all the dirt is removed.
  2. Grate the carrots either with a grater or a food processor. 
  3. Chop the almonds into small pieces

Cooking

  1. Put a heavy kadai on high heat and add the grated carrots.
  2. Cook while stirring occasionally till the quantity reduces to 2/3 or. 
  3. The color of the carrots would get enhanced.
  4. Add full-fat milk and simmer carrots stirring occasionally.
  5. When the milk begins to froth and then start reducing keep stirring constantly so that it does not stick to Kadahi. 
  6. Keep cooking till milk reduce to khoya approx. 1 hour.
  7. Add Cardamom powder, dry fruits, ghee, and sugar. 
  8. Cook till ghee starts separating. 
  9. Take off the flame and garnish with roasted almonds.
