Som Tam

Som Tam is a healthy and tasty Thai cuisine, green papaya salad. It has a combination of flavors sweet, sour, crunchy, and spicy. Traditionally, this Thai papaya salad, Sum Tam is made with Palm Sugar and Fish sauce but we have adapted it for availability, convenience, and for vegetarian friends but with no significant difference in the taste.

Ingredients

  • 2 Medium Tomatoes
  • 4 - 5 Green Chili
  • ½ Medium Carrot
  • 5-6 Cloves Garlic
  • 1 Small Green Papaya
  • 2 Tablespoon Jaggery
  • 100 g Peanuts
  • 2 Green Onion (Scallion)
  • 2 - 3 Green Beans
  • 2 Lime
  • 1 Tablespoon Soy Sauce

Preparation

  1. Peel and de-seed papaya then shred it with the Help of a Grater or a Jullien peeler. 
  2. Put it in a bowl full of Iced water to maintain its crunch.
  3. Roast the peanuts and remove the skin.
  4. Chop tomatoes into small pieces.
  5. Make Julliens of Carrot.
  6. Remove Green Onion off any hard skin.
  7. Take a pestle and crush Garlic, Green Onion, and Green Chilies in it.
  8. Add shredded Jaggery (or Palm Sugar if available), Soy sauce, and Lemon juice. Also, throw the Lime peel in it.
  9. Add Green Beans, Carrot, half of the Peanuts and pound a few times to mix juices.
  10. Drain the water completely out of the Papaya shred using a strainer.
  11. Add Papaya shreds and Tomatoes and mix all ingredients together while Lightly pounding.
  12. Taste and add any ingredient to adjust to your taste.
  13. Add remaining Peanuts crushed for extra crunch and flavor.

Serving

  • Remove Lime peels before serving.
  • Serve in a shallow bowl or saucer.
